Chickpea Salad with Lemon Tahini Dressing

INGREDIENTS

  • For the Salad:

    • 1 can (15 oz) chickpeas, drained and rinsed

    • 1 cucumber, diced

    • 1 large tomato, diced

    • 1/4 red onion, thinly sliced (optional)

    • 1/4 cup fresh parsley, chopped

    • 1/4 cup crumbled feta cheese (optional)

  • For the Lemon Tahini Dressing:

    • 2 tbsp tahini

    • 2 tbsp lemon juice (freshly squeezed)

    • 1 tbsp olive oil

    • 1 garlic clove, minced

    • 1-2 tbsp water (to thin, as needed)

    • Salt and pepper, to taste

INSTRUCTIONS

  • Prepare the Salad: In a large bowl, combine the chickpeas, cucumber, tomato, red onion, and parsley. Toss to mix evenly.

  • Make the Dressing: In a small bowl, whisk together tahini, lemon juice, olive oil, minced garlic, and water until smooth and creamy. Add salt and pepper to taste.

  • Assemble: Pour the dressing over the salad and toss until everything is well-coated. If you like, top with crumbled feta cheese for extra flavor.

  • Serve: Serve immediately or chill for 30 minutes before serving to allow the flavors to meld. Enjoy as a light lunch or a side dish!
