INGREDIENTS
For the Salad:
1 can (15 oz) chickpeas, drained and rinsed
1 cucumber, diced
1 large tomato, diced
1/4 red onion, thinly sliced (optional)
1/4 cup fresh parsley, chopped
1/4 cup crumbled feta cheese (optional)
For the Lemon Tahini Dressing:
2 tbsp tahini
2 tbsp lemon juice (freshly squeezed)
1 tbsp olive oil
1 garlic clove, minced
1-2 tbsp water (to thin, as needed)
Salt and pepper, to taste
INSTRUCTIONS
Prepare the Salad: In a large bowl, combine the chickpeas, cucumber, tomato, red onion, and parsley. Toss to mix evenly.
Make the Dressing: In a small bowl, whisk together tahini, lemon juice, olive oil, minced garlic, and water until smooth and creamy. Add salt and pepper to taste.
Assemble: Pour the dressing over the salad and toss until everything is well-coated. If you like, top with crumbled feta cheese for extra flavor.
