Ingredients (Serves 4):

  • 8 large eggs

  • ⅓–½ cup avocado oil mayo (adjust to preference)

  • 1–2 tsp Dijon mustard

  • 1–2 tbsp finely chopped celery

  • 1 tbsp of fresh oregano or dill 

  • 1 tsp lemon juice (optional, for brightness)

  • Sea salt + freshly cracked pepper to taste

  • Optional add-ins: chopped chives, paprika, capers, or a dash of turmeric


Instructions:

  1. Boil the Eggs: Place eggs in a saucepan and cover with cold water. Bring to a gentle boil, then turn off heat, cover, and let sit for 10–12 minutes.

  2. Ice Bath + Peel: Transfer eggs immediately to an ice bath for 5–10 minutes. Peel once cooled.

  3. Chop: Roughly chop eggs (chunky for texture or fine for creamy).

  4. Mix: In a bowl, gently fold together eggs, mayo, mustard, celery, dill, lemon juice, salt, and pepper.

  5. Chill (Optional but Recommended): Let rest in the fridge 30 minutes to allow flavors to develop.
