Everyday Shaved Kale & Brussels Salad
Fresh, vibrant, and full of texture, this simple salad is one you'll come back to all season long. It's packed with fiber, healthy fats, and bright citrus flavor—perfect as a light lunch or paired with grilled salmon, chicken, or chickpeas for a more substantial meal.
Ingredients:
For the Salad
1 bunch lacinato (dinosaur) kale, stems removed and thinly sliced
1 pound Brussels sprouts, trimmed and shaved
¼ cup roasted pumpkin seeds
¼ cup sliced almonds
2 tablespoons hemp hearts
¼ cup freshly grated Parmesan (or nutritional yeast for a dairy-free option)
Lemon Dijon Dressing
¼ cup extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 small garlic clove, finely grated
½ teaspoon sea salt
Freshly cracked black pepper, to taste
Instructions:
In a large bowl, combine the shaved kale and Brussels sprouts.
In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper until smooth.
Pour the dressing over the greens and gently massage with your hands for 1–2 minutes. This softens the kale and helps the flavors absorb.
Add the pumpkin seeds, almonds, hemp hearts, and Parmesan. Toss until everything is evenly coated.
Taste and adjust seasoning with additional lemon juice, salt, or pepper if desired.
Let the salad rest for 10 minutes before serving to allow the flavors to come together.
