Recipe: Golden Soul Soup

Golden Soul Soup

Serves 4–6

Ingredients

  • 1 tablespoon olive or avocado oil

  • 1 yellow onion, diced

  • 3 garlic cloves, minced

  • 1 tablespoon freshly grated ginger

  • 1 teaspoon turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • ½ teaspoon cinnamon

  • ¼ teaspoon red pepper flakes, optional

  • 1 medium sweet potato, peeled and cubed

  • 1 cup red lentils, rinsed

  • 4 cups vegetable broth

  • 1 can full-fat coconut milk

  • 1 cup chopped spinach

  • Juice of ½ lime

  • Salt and black pepper, to taste

  • Fresh cilantro, for serving

  • Pumpkin seeds or toasted cashews, optional

Directions

Warm the oil in a large pot over medium heat. Add the onion and cook for about 5 minutes, until softened.

Add garlic and ginger and cook for another minute. Stir in turmeric, cumin, coriander, cinnamon and red pepper flakes and allow the spices to become fragrant.

Add the sweet potato, lentils and vegetable broth. Bring to a boil, then reduce the heat and simmer for approximately 20–25 minutes, until the lentils and sweet potato are tender.

Stir in the coconut milk and spinach and cook for another 3–5 minutes. Add the lime juice and season with salt and pepper.

For a creamier soup, blend a few cups and stir them back into the pot—or use an immersion blender briefly while leaving plenty of texture.

Serve warm with cilantro and a sprinkle of pumpkin seeds or toasted cashews.
