A quick and healthy alternative to regular rice, cauliflower rice is low-carb, gluten-free, and packed with nutrients. Here's a simple recipe to make this delicious side dish:
Ingredients:
1 medium head of cauliflower (or 1 bag of pre-riced cauliflower)
1 tablespoon olive oil
Salt and pepper, to taste
Optional: fresh garlic, onion, herbs, or seasonings of your choice
Instructions
Prepare the Cauliflower:
If using a whole cauliflower, remove the leaves and cut the cauliflower into florets.
Use a food processor to pulse the florets into small rice-sized pieces. If you don’t have a food processor, you can grate the florets using a box grater for a similar effect.
Cook the Cauliflower Rice:
Heat the olive oil in a large skillet over medium heat.
Add the riced cauliflower to the skillet. If you like garlic or onion, you can sauté them in the oil for a minute or two before adding the cauliflower.
Stir and cook for 5-7 minutes, or until the cauliflower is tender and cooked through.
Season:
Add salt and pepper to taste. Feel free to get creative with your seasoning! Add some fresh garlic, turmeric, or fresh herbs like cilantro or oregano to elevate the flavor.
Serve:

For a crispier texture, sauté the cauliflower rice for a bit longer, or let it sit undisturbed in the pan for a minute or two before stirring.
Cauliflower rice can be stored in an airtight container in the fridge for up to 3-4 days. It also freezes well!
