Crisp Autumn Apple & Pomegranate Salad

This nourishing salad is a celebration of fall’s natural abundance—crisp apples, jewel-toned pomegranate seeds, and greens kissed by the changing light. Ingredients:
For the salad:
1 large Honeycrisp or Gala apple, thinly sliced or julienned
½ cup fresh pomegranate seeds
4 cups baby arugula, spinach, or mixed greens
¼ cup chopped raw pecans or walnuts (toasted optional)
2 Tbsp crumbled goat cheese or feta (optional)
1–2 thinly sliced radishes (for color and crunch)
Handful of microgreens or fresh mint leaves (optional)
For the dressing:
2 Tbsp extra virgin olive oil
1 Tbsp fresh lemon juice
1 tsp apple cider vinegar
1 tsp raw honey or maple syrup
½ tsp Dijon mustard
Pinch of sea salt and black pepper
Instructions:
Make the dressing: In a small jar or bowl, whisk together olive oil, lemon juice, apple cider vinegar, honey, mustard, salt, and pepper. Set aside.
Assemble the salad: In a large bowl, gently toss the greens with the apples, pomegranate seeds, radishes, and nuts.
Add the magic: Drizzle the dressing over the salad and toss gently to coat. Sprinkle with cheese (if using), fresh herbs or microgreens.
