Recipe: Harvest Bowl

Harvest Bowl with Roasted Vegetables, Quinoa & Tahini-Maple Drizzle

A grounding, nutrient-dense meal that celebrates the abundance of autumn. This recipe balances sweet, savory, and earthy flavors—perfect for nourishing your body as you welcome the new season.


Ingredients:

For the bowl:

  • 1 cup quinoa, rinsed

  • 2 cups vegetable broth or water

  • 1 medium sweet potato, diced

  • 1 small butternut squash, peeled and cubed

  • 2 medium carrots, sliced

  • 1 small red onion, cut into wedges

  • 1 apple, cored and sliced (leave skin on)

  • 2 cups kale or Swiss chard, stems removed and chopped

  • 1 Tbsp olive oil

  • 1 tsp ground cinnamon

  • 1 tsp smoked paprika

  • ½ tsp sea salt

  • ¼ cup pumpkin seeds (pepitas), toasted

For the tahini-maple drizzle:

  • ¼ cup tahini

  • 2 Tbsp pure maple syrup

  • 1 Tbsp apple cider vinegar or lemon juice

  • 1 clove garlic, finely minced

  • 2–3 Tbsp warm water (to thin)

  • Pinch of sea salt


Instructions:

  1. Cook the quinoa: In a medium pot, bring the quinoa and broth (or water) to a boil. Reduce heat, cover, and simmer for 15 minutes, or until fluffy. Remove from heat and let rest.

  2. Roast the vegetables & apple: Preheat oven to 400°F (200°C). Spread sweet potato, squash, carrots, onion, and apple on a large baking sheet. Toss with olive oil, cinnamon, smoked paprika, and sea salt. Roast for 25–30 minutes, stirring once, until golden and tender.

  3. Sauté the greens: In a skillet, lightly sauté kale or Swiss chard with a splash of olive oil until just wilted.

  4. Make the drizzle: Whisk together tahini, maple syrup, apple cider vinegar (or lemon juice), garlic, salt, and enough warm water to make it pourable.

  5. Assemble the bowls: Divide quinoa among four bowls. Top with roasted vegetables and apple, sautéed greens, and a sprinkle of toasted pumpkin seeds. Drizzle generously with the tahini-maple sauce.
