Vegan Watermelon Whole Fruit Popsicles
These popsicles are not only delicious but also healthy, packed with the natural goodness of watermelon and mixed berries. Adjust sweetness according to your taste preference and enjoy this cool treat!
Ingredients:
4 cups of fresh watermelon, chopped into chunks
1 cup of mixed fresh berries (such as strawberries, blueberries, raspberries)
1 tablespoon of honey or agave (optional, depending on sweetness of fruits)
Juice of 1 lime (optional, for a citrusy twist)
Instructions
Prepare the Fruits:
Wash and prepare all the fruits. Remove seeds from the watermelon if necessary and chop into small chunks.
Blend the Watermelon:
In a blender, add the chopped watermelon chunks. Blend until smooth. If desired, strain the watermelon juice to remove any pulp for a smoother texture.
Prepare the Berry Mix:
In a small bowl, mix the berries together. You can lightly mash them with a fork to release some juices if desired.
Layering the Popsicles:
Using popsicle molds or small paper cups, begin layering your popsicles. Start with a layer of the watermelon juice, filling each mold about one-third full.
Add the Berries:
Next, add a spoonful of mixed berries into each mold, distributing them evenly.
Repeat Layers:
Continue layering with watermelon juice and berries until the molds are filled to the top. Ensure you leave a small space at the top to allow for expansion.
Insert Sticks:
Place popsicle sticks into each mold. If using paper cups, cover each cup with aluminum foil and insert sticks through the foil to keep them upright.
Freeze:
Place the popsicle molds in the freezer and freeze for at least 4-6 hours, or until completely firm.
Serve:
