Vegan Holiday Recipe: Creamy Mushroom & Thyme Soup

A warm, nourishing bowl perfect for long winter evenings—simple, grounding, and filled with earthy comfort.


Ingredients:

  • 1 lb mixed mushrooms, sliced

  • 1 onion, diced

  • 2–3 garlic cloves, minced

  • 2 tbsp olive oil or vegan butter

  • 4 cups vegetable broth

  • 1 cup unsweetened cashew or oat milk

  • 1 tbsp fresh thyme

  • Salt & pepper to taste


Instructions:

  1. Sauté onion and garlic in olive oil until fragrant.

  2. Add mushrooms and thyme; cook until softened.

  3. Pour in broth and simmer for 10 minutes.

  4. Blend until smooth, then stir in plant milk.

  5. Season to taste and serve warm with herbs.
