Vegan Recipe: Golden Lentil & Coconut Soup

This golden lentil and coconut soup is simple, comforting, and deeply satisfying—perfect for easing into the new year with intention and care.


Ingredients:

  • 1 cup red lentils, rinsed

  • 1 tbsp olive oil or coconut oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 tsp turmeric

  • 1 tsp cumin

  • 4 cups vegetable broth

  • 1 can full-fat coconut milk

  • Salt & pepper to taste

  • Fresh cilantro or lime (optional)


Instructions:

  1. Sauté onion, garlic, and ginger in oil until fragrant.

  2. Add spices and stir gently to release their aroma.

  3. Add lentils and broth; bring to a simmer and cook 15–20 minutes until lentils soften.

  4. Stir in coconut milk, season to taste, and warm gently.

  5. Serve with herbs or a squeeze of lime for brightness.
