This golden lentil and coconut soup is simple, comforting, and deeply satisfying—perfect for easing into the new year with intention and care.
Ingredients:
1 cup red lentils, rinsed
1 tbsp olive oil or coconut oil
1 onion, diced
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tsp turmeric
1 tsp cumin
4 cups vegetable broth
1 can full-fat coconut milk
Salt & pepper to taste
Fresh cilantro or lime (optional)
Instructions:
Sauté onion, garlic, and ginger in oil until fragrant.
Add spices and stir gently to release their aroma.
Add lentils and broth; bring to a simmer and cook 15–20 minutes until lentils soften.
Stir in coconut milk, season to taste, and warm gently.
Serve with herbs or a squeeze of lime for brightness.
